HOW TO?

Make:
1. Paneer
2. Sprout Beans
3. Naan
4. Chocolate Ganache
5. Chocolate Sauce  
1. Make Paneer
Ingredients:
  • 1 litre full fat milk
  • Juice of 1 lemon 
  • Muslin cloth 
Method:
  • Heat the milk in a thick bottomed pan. As the milk reaches its boiling point add the lemon juice.  

  • Milk will start to curdle. If the entire milk is not curdled, add a few more drops of lemon juice. 

  • Take off heat and decant in a muslin or cheese cloth. Place the cloth in a strainer and then decant so all the water drains away and you are left with a blob of curdled milk or paneer.

  • Next carefully collect all the ends of the cloth & tie a knot to form a round parcel. 
  • Hold this parcel under cold water. This makes it easier to squeeze out all the excess water from the paneer. Now squeeze all excess water and let the parcel rest under a heavy bottomed pan.
  
  • After 30 mins, untie the knot and you will have a nice looking blob of paneer. Knead it well to form a nice dough or slab of cheese. 

  • Use in curries as cubes or to make kofta balls or rasagullas. 
2.Sprout Beans
Step 1-Wash the lentils and drain excess water out 
Step 2-Soak the lentils over night or for 8 hours. Add enough water to soak them well
 Step 3- After 8 hours drain them and put them in a kitchen towel or cloth.
 Step 4- Tie the towel to form a packet. Place them tightly in a bowl covered with something heavy. Leave it for another 8 hours
                        


After 8 hours untie the cloth and you will see sprouts appearing on the lentils.If you want longer and bigger sprouts keep them covered in the cloth for longer

                            3. Make Naan
Usually a naan bread has yeast in it but I have a recipe to make naans using store cupboard ingredients. Do try it with Rogan josh or Kofta curry!
Ingredients: Makes 6-7 
  1. 1¾ cup Whole wheat flour & 1/4 cup plain flour  or just use 
  2. ½ Cup Water
  3. 4-5 Fat Garlic cloves finely chopped
  4. Freshly chopped coriander or dry parsley (optional)
  5. 2-3 tbsp. Oil for kneading
  6. Salt to taste
Method: 
  • Pre-heat oven to 180 degree C. 
  • Make the dough by mixing the flour, water, coriander & salt together. Add the water slowly as needed. 
  • Knead till you get a slightly lose, sticky dough. Use oil to bind everything together. Rest for at least 20 mins. 
  • Divide the dough into 6-7 equal sized portions. 
  • Sprinkle some dry dough on a plain surface, place the dough ball and using a rolling pin flatten it. Now stretch the dough to make it into an oblong shape. 
  • Take a spoon full of chopped garlic and apply to the oblong piece of bread. Now run the rolling pin over the bread so the garlic is embedded well. 
  • Brush over some ghee or melted butter. 

  • Make all the naan's and line them on a baking sheet. 
  • Bake in the oven for 8-10 mins. 
The naan's will be slightly stiff from out side but soft from inside. 




            4. Make Chocolate Ganache Icing
Take a half a cup of dark chocolate chips or about 100g of cooking or dark chocolate. 
Add hot milk to it. Leave to stand for a few mins. Add icing sugar & mix well. 
The hot milk will melt the chocolate & you will get a creamy chocolate icing. 
Alternatively, add a tsp of butter & milk to the chocolate chips. Melt in microwave on high for 2mins or less. 
Once the chocolate starts to melt add the icing sugar & mix well. Use to ice cakes, muffins or cup cakes.

5. Chocolate sauce
  1. ½ Cup Dark chocolate chips
  2. ¼ Cup sour cream 
  3. 1 tbsp. Icing or powdered sugar 
  4. ¼ Cup or 50g Unsalted butter at room temperature

  • Mix the butter & chocolate chips together in a microwave safe bowl. Melt for 30 secs and then stir till the chocolate completely dissolves in the butter 
  • Add the icing sugar & sour cream 
  • Mix well and pour over your cake or muffin
